Ingredients

  • 1 package puff pastry sheets thawed if frozen
  • 8 oz brie cheese soft, cut into small cubes
  • 1 cup fresh cranberries washed and dried
  • 2 tablespoons honey optional, for sweetness
  • 1 egg egg beaten, for egg wash
  • 1 tablespoon water for egg wash
  • 1 teaspoon fresh thyme chopped, optional

Equipment

  • Mini muffin tin
  • Rolling pin
  • Sharp knife
  • Mixing bowl
  • Pastry brush
  • Oven

Method

  1. Preheat the oven to 375°F (190°C) and lightly grease a mini muffin tin.
  2. Roll out the thawed puff pastry on a floured surface to smooth out creases and cut into small squares about 2 inches wide.
  3. Gently press each pastry square into the muffin cups, forming little cups, and chill in the fridge for 10 minutes to help them hold their shape.
  4. Cut the brie into small cubes, roughly 1/2 inch, and place one cube into the center of each pastry cup.
  5. Top each brie cube with a few fresh cranberries and a small drizzle of honey if you like a touch of sweetness.
  6. Mix the beaten egg with water to make an egg wash, then brush the edges of each pastry with it for a golden finish.
  7. Bake the bites in the preheated oven for 15-20 minutes until the pastry is golden and puffed, and the cheese is bubbling.
  8. Remove the bites from the oven and let them rest for 5 minutes. They should be crispy on the outside, gooey inside, with bright cranberries on top.
  9. Garnish with chopped thyme if desired, and serve warm for a festive, flavorful appetizer.

Notes

For extra flavor, sprinkle a little cracked black pepper or flaky sea salt before baking. These bites are best enjoyed warm but can be kept at room temperature for up to 2 hours.
