  • 1/2 cup fresh lemon juice strained to remove pulp
  • 1 cup water preferably cold or ice water
  • 1/4 cup simple syrup can adjust to taste
  • 1 cup ice cubes more if needed for texture

Method
 

  1. Measure out the fresh lemon juice and pour it into the blender.
  2. Add the cold water and simple syrup to the blender with the lemon juice.
  3. Drop in the ice cubes into the blender, filling up to the top to ensure a frosty texture.
  4. Secure the lid on the blender and blend on high speed for about 30 seconds, until the mixture is smooth and icy with a snow-like consistency.
  5. Check the texture; if it’s too thick, add a splash more water and pulse briefly to loosen it up.
  6. Pour the slushie into glasses and garnish with a lemon wedge or a sprig of mint if desired.

Notes

For an extra burst of flavor, add a few fresh mint leaves before blending.
