  • 1 cup brown sugar packed
  • 1/2 cup peanut butter natural, creamy
  • 2 cups rolled oats lightly toasted for extra flavor
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips semi-sweet or dark
  • Pinch salt optional, enhances flavor

Method
 

  1. Line your 9x13 inch baking pan with parchment paper and set aside.
  2. Melt the butter in a saucepan over medium heat until it just starts to foam and smells toasty, about 2-3 minutes.
  3. Add the brown sugar to the melted butter and stir constantly until the mixture is smooth and starts to bubble, about 3-4 minutes.
  4. Remove the saucepan from heat and stir in the peanut butter until the mixture is glossy and smooth.
  5. Pour the warm mixture into a large bowl and let it cool slightly for 2-3 minutes.
  6. Add the vanilla extract, a pinch of salt, and the toasted oats to the bowl. Mix thoroughly until all ingredients are evenly coated and combined.
  7. Gently fold in the chocolate chips, distributing them evenly throughout the mixture.
  8. Transfer the mixture to the prepared baking pan and press down firmly with a spatula or your hands to create an even layer.
  9. Bake in a preheated oven at 180°C (350°F) for 15-20 minutes, until the edges are golden brown and fragrant.
  10. Remove the pan from the oven and let the bars cool in the pan for at least 30 minutes, then transfer to a cooling rack.
  11. Once cooled, cut into 12 bars with a sharp knife. Let them rest for 10 minutes before serving for clean, neat slices.

Notes

For extra flavor, lightly toast the oats before mixing. Chill the bars before slicing for cleaner cuts and better texture.
