Method
- Add the frozen pineapple chunks, ice cubes, and coconut milk to the blender.
- If using fresh ginger, add the grated piece into the blender for a spicy kick.
- Secure the lid and blend on high speed until the mixture is smooth and icy, about 30-45 seconds. The texture should be velvety with some small ice crystals remaining.
- Taste the slushie and if desired, add honey or agave syrup for extra sweetness. Blend again briefly to combine.
- Pour the slushie into glasses directly from the blender. The mixture will be thick and scoopable but easy to sip.
- Serve immediately with a straw and enjoy the bright, tropical flavors and icy texture.
Notes
For a creamier version, substitute coconut milk with Greek yogurt or add a splash of coconut cream before blending.
