  • 2 cups fresh pineapple chunks frozen works best for slushie texture
  • 1 cup ice cubes adjust for desired thickness
  • 0.5 cup coconut milk optional for creaminess
  • 1 inch fresh ginger peeled and grated, optional
  • to taste honey or agave syrup optional, for extra sweetness

Method
 

  1. Add the frozen pineapple chunks, ice cubes, and coconut milk to the blender.
  2. If using fresh ginger, add the grated piece into the blender for a spicy kick.
  3. Secure the lid and blend on high speed until the mixture is smooth and icy, about 30-45 seconds. The texture should be velvety with some small ice crystals remaining.
  4. Taste the slushie and if desired, add honey or agave syrup for extra sweetness. Blend again briefly to combine.
  5. Pour the slushie into glasses directly from the blender. The mixture will be thick and scoopable but easy to sip.
  6. Serve immediately with a straw and enjoy the bright, tropical flavors and icy texture.

Notes

For a creamier version, substitute coconut milk with Greek yogurt or add a splash of coconut cream before blending.
